Feeling Hungry, try this : Pasta with White Sauce

White sauce pasta is a delicious dish made of pasta, butter, milk, cheese and herbs. It is basically cooked pasta tossed in cheesy white sauce. White sauce is also known as bechamel sauce and is made using flour, butter and milk. It is originated from the Italian and French cuisines and is a base for many other sauce recipes.

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Total Time: 40 minutes

Serve: 2 servings

Ingredients:

FOR BOILING PASTA

  • 4-5 cup water
  • 1/2 teaspoon salt
  • 3/4 cup pasta ( penne or any other)

FOR SAUTEING VEGETABLES

  • 1/2 tablespoon oil
  • 1/4 cup chopped onion
  • 1/4 cup chopped capsicum (red or green)
  • 1/4 cup chopped carrots
  • 3 tablespoon sweet corn (boiled)
  • 1/4 cup chopped broccoli
  • 1/4 teaspoon pepper (crushed)
  • 1/2 teaspoon salt (or to taste)

FOR WHITE PASTA SAUCE

  • 1 1/2 tablespoon butter
  • 1 1/2 maida / plain flour
  • 1/2 cup milk
  • 1/2 teaspoon pepper (crushed)
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon mixed herbs (oregano or pizza seasonings)
  • 1/2 teaspoon salt
  • cheese (for garnishing)

Procedure-

For boiling pasta

1.Take 4-5 cups water in deep sauce pan, bring it to boil over medium flame. When it start boiling, add 3/4 cup Penne pasta and 1/2 teaspoon salt.

2. Boil them until it is cooked but not very soft. It will take around 10-12 minutes. To check whether it is cooked or not, take one pasta in a fork and bite it. If it is little firm to bite, it is cooked. If it is to hard to bite, it requires more cooking.

3. Transfer cooked pasta to a large colander and drain excess water.

For sauteing vegetables

1. While pasta is cooking, heat 1/2 teaspoon oil in a pan or kadai over high flame. Add 1/4 cup chopped onion and saute it until it become transparent pink and then add chopped vegetables and salt.

2. Stir and cook until veggies are little cooked but still crunchy, for around 2-3 minutes. Turn off the flame and transfer them to a plate.

For white sauce

1. Heat 1 1/2 tablespoon butter in the same pan or kadai over medium flame. Add 1 1/2 tablespoon maida ( all purpose flour ).Stir continuously and cook for a minute.

2. Pour 1 1/2 cups milk little by little while stirring continuously with the whisk.

3. Stir and mix for 1-2 minutes. No lumps of maida should be formed.

4. Reduce the flame to low. Continue stirring and cooking until mixture starts to thicken. It will take around 3-4 minutes depending on the size and thickness of the pan. When mixture starts to coat the back of the spoon it means it has started to thicken.

5. Add 1/4 teaspoon mixed herbs, 1/4 teaspoon red chili flakes, a pinch of black pepper powder and salt.Mix well

1. Add sauteed vegetables and boiled penne in the white sauce.

2. Turn off flame and mix well.

3. Transfer it to a serving plate. White sauce pasta is now ready to serve. Garnish with grated cheese and serve hot for better taste.

NOTES:
  • Firstly, saute the maida on low to medium flame to prevent from changing colour.
  • White pasta sauce will continue to thicken as it cools down. So serve hot any enjoy the best flavors.
  • For cheesy flavor add 2 tablespoon grated cedar cheese or mozzarella cheese after adding the milk.
  • You can add veggies of your own choice like button mushrooms, french beans etc. are excellent for creamy white sauce pasta.
