Best for sweet and sour cravings : Panipuri recipe

Panipuri or Puchka is a type of snack that originated in the Indian subcontinent. It consists of a round or ball-shaped, hollow puri, filled with the mixture of flavored water, tamarind chutney, chili, chaat masala, potato, onion or chickpeas.

Preparation time: 20 minutes

Cooking Time: 15 minutes

Serve: 4 servings


For making the dough-

  • 1/2 cup semolina (or suji)
  • 2 tablespoon all purpose flour (or maida)
  • 1/4 teaspoon baking soda
  • oil for deep fry

For panipuri water-

  • 1 tablespoon tamarind
  • 1/4 teaspoon black salt
  • salt to taste
  • 1 teaspoon chat masala
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon green chilies ( finely chopped )

For potato masala-

  • 2 large size potatoes (boiled and mashed)
  • 1 teaspoon chat masala
  • 1/4 cup black chana (soaked)
  • 1/4 cup onions (finely chopped)
  • 1 teaspoon green chilies (finely chopped)
  • 1/4 teaspoon black salt
  • salt to taste
  • 2 tablespoon panipuri water

Method of making panipuri

For making puri-

1. To make the dough take semolina, all purpose flour and baking soda in a bowl. Mix all the dry ingredients well. Add hot water gradually and mix. Make a soft dough. Cover with a wet cloth and keep aside for 10-15 minutes.

2. Knead the dough again for sometime.(If you feel that the dough is too tight then add a little hot water and knead it for sometime.

3. Make small balls from the dough. Cover and keep aside.

4. Take one small dough ball and roll into a big thin sheet and cut small puris out of it with a cutter. Put in a plate and cover with a wet cloth. Make all the puris in this way.

5. Heat oil for deep fry in a kadai. Fry all the puris on high flame.Make sure each one of them puffs all right.

6. After frying all the puris, cool down completely and store in a airtight container.


Making panipuri water-

1. Take tamarind and add 1/2 cup of hot water in a bowl. Let it soak for 15 minutes.

2. Now mash the tamarind well to extract the pulp. Strain the tamarind water in another bowl. Add black salt, salt, chat masala, red chili powder and green chilies. Mix everything well. Add 1 cup of water and mix well. Panipuri water is ready.

Making potato masala-

1. Take mashed potato, salt, red chili powder, chat masala, soaked black chana, chopped onions, green chilies, black salt and 2 tablespoon panipuri water in a bowl. Mix everything well. Potato masala is ready.

How to assemble a panipuri

Assembling of panipuri is very easy and simple. Take a puri, make a large hole (do it gently) in it then add mixture of potato and while serving add panipuri water on top of it.

  • Fry puris in small batch.
  • Make sure to keep the upside of the puri while rolling the puri remain same side while frying.
  • Make sure to assemble panipuri only when you are eating it or else it will get soggy and the crispiness of the puri will be lost.
  • You may add paste of coriander leaves and mint leaves in water of panipuri to enhance its flavors.
