Veg noodle recipe – A quick dinner idea for busy week nights. Making this healthy and delicious vegetable noodles is super easy. It takes only 30 minutes to make 3 servings.

You can use any of your favorite veggies like cabbage, carrots, capsicum, zucchini, broccoli, green peas, etc.

Preparation Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Servings: 3 servings

( 1 cup = 250 ml)

Ingredients:

For boiling noodles-

  • 150 to 200 grams noodles, whole wheat or plain flour
  • 1.5 litres water, 5 to 6 cups water
  • 1/2 teaspoon oil
  • 1/2 teaspoon salt
  • some water for rinsing noodles

For sauteing noodles-

  • 1-2 tablespoon oil
  • 1 cup cabbage shredded
  • 1/2 cup carrots shredded or julienned
  • 1/3 cup spring onions finely chopped
  • 1/3 cup capsicum (green bell pepper) julienned or finely chopped
  • 8-10 french beans finely chopped
  • 3-4 cloves of garlic finely chopped
  • 1 teaspoon ginger paste
  • 1-2 teaspoon celery or coriander leaves finely chopped
  • black pepper powder as required
  • 1 teaspoon white vinegar
  • 2-3 teaspoon soya sauce
  • 2-3 teaspoon red chili sauce
  • 2 teaspoon green chili sauce
  • 1-2 teaspoon tomato sauce

Directions to make noodles:

Boiling noodles

1.First heat enough water in a pan with salt and few drops of oil.

2.When the water comes to boil, add the noodles.

3.Stir and allow the noodles to cook till they are just cooked (not over cooked).

4.Once they are cooked well, drain them in a colander or sieve. Then rinse them in fresh water by placing the colander or sieve under fresh tap.

5.Drain and keep aside.

Making noodles

1.Heat oil in a wok or pan.

2.First add the chopped garlic and ginger paste and stir fry on medium flame for some seconds.

3. Increase the flame to high and add the chopped spring onions. Keep on stirring continuously and stir fry the onions till they become translucent.

4.Add all the chopped veggies-carrots, capsicum, french beans, cabbage.

5. Continue to toss and fry on high flame till the veggies are almost cooked.

6.Add the soya sauce, vinegar, red chili sauce, green chili sauce, celery, salt and pepper. Stir well.

7. Add the noodles.

8.Give a nice mix and then cook for 1-2 minutes.

9.Serve hot and warm.

Notes:

Noodles: for this recipe you can any kind of noodles like whole grain, hakka, etc. While cooking noodles, make sure not to over cook. If you will over cook them, it will become sticky and won’t taste the same.

High flame: it is the main factor that lends a smoky aroma to the Chinese dishes. So just like any other Chinese dishes the veg. noodles has to be prepared on a high flame.

Wok: most Chinese restaurants use a wok made of carbon steel which also helps to fry the food imparting a smoky aroma. A heavy bottom pan, cast iron skillet or a kadai also work well for home preparations.

Soya sauce: it is the key ingredient used to make any chinese noodles to get a umani taste. Choose organic and natural brewed soya sauce for health reasons

Other sauce: you can add sauce of your own choice. I have use red chili, green chili, soya, and tomato sauce. If you want you can avoid any of them and instead u can add schezwan sauce or sriracha.
