Mushroom Ravioli: Pasta filled with mushroom and cream
What is a Ravioli?
Ravioli (singular: raviolo) are a type of pasta comprising a filling enveloped in thin pasta dough. Usually served in broth or with a sauce, they are originated as a traditional food in Italian cuisine. Ravioli are commonly square, though other forms are also used, including circular and semi-circular. There are many types of ravioli like- Mushroom Ravioli, Vegetable Ravioli, Bacon cheese Ravioli, etc.

Ravioli are a type of pasta originated in Italy. The main ingredients of the ravioli are Flour, eggs, water and filling. The filling of the ravioli varies from place to place. You can fill the ravioli with mushroom, ricotta cheese, spinach, etc.

Mushroom Ravioli-
Homemade Mushroom Ravioli filled with creamy filling of mushroom is just the best. It is quite lengthy process of making ravioli but once done, its all worth it. When we hear about an Italian cuisine, we are like- no, we can’t make this, this must be difficult, it must require special training, etc, Here I am going to give you the simplest recipe of the Mushroom Ravioli step by step.

The recipe given below is made with the fresh ingredients. No canned product is used below. I have made pasta dough with eggs. However, if you are a vegetarian and want to make the ravioli without the eggs I will tell you the best trick of doing the same- You can use lasagna sheets instead of making the pasta. Lasagna sheets are easily available in the market and they are egg less. You have to boil the sheets in the boiling water and your pasta sheets are ready to fill the mushroom filling.

Mushroom ravioli is usually served as a main course. Our dish is already rich in flavor but still you can complement it with a lighter side dish or a salad.This delicious Ravioli recipe is easier than you might think, and so much tastier than any pasta you can buy in a store.

Ingredients:-
For pasta-
- Refined wheat flour or pasta flour- 1 cup
- Egg- 2
- Salt- a pinch
For making filling of mushroom ravioli-
- Oil- 2 tablespoon
- Garlic clove- 1 1/2 (chopped)
- Green chilli- 1/2 (chopped)
- Onion- 1 (diced)
- Mushroom- 1 cup (chopped)
- Spinach leaves- 1/2 cup (chopped)
- Basil leaves- 6-8 (chopped)
- Ricotta cheese- 1 1/2 tablespoon
- Black Pepper- 1/2 teaspoon (crushed)
- Salt- to taste
- Water- for sealing ravioli
For boiling pasta-
- Water- as required
- oil- 1 tablespoon
For sauce of mushroom ravioli-
- Oil- 1 tablespoon
- Onion- 1/2 (chopped)
- Mushrooms- 3 (chopped)
- Garlic clove- 1 (crushed)
- Basil leaves- 3-4 (chopped)
- Chimes- 2 tablespoon (optional)
- Vegetable stock- 1 cup
- Double cream- 1/4 cup
- Salt- to taste
- black pepper- to taste
Directions for making Mushroom ravioli-
Making pasta –
1.In a bowl add refined flour. Make a hole at the center and add egg. Now start mixing the egg with the flour. Add a pinch of salt and mix.

2.Start kneading the dough. Dough should be hard for making pasta. Knead the dough properly so that no space is left between the dough.

3.Take a plastic bag and add the dough into it. Let it rest for 15-20 minutes.

4. After 20 minutes, dust the board with the flour and roll the dough into a sheet. Take a pasta machine and start rolling a thin sheet of the dough.

5.Repeat the process until you have a thin sheet of the dough without any cracks.
Making filling of mushroom ravioli-
1.Heat oil in a pan and add chopped garlic and saute them till they become golden in color. Add chopped green chilli and onions. Saute them and add some salt. Saute the onions till they become translucent in color.

2.Now add chopped mushrooms and saute them. Mushroom tend to leave a lot of water so, cook them till all the water is evaporated from the pan and mushroom gets soften.

3.After cooking mushrooms for about 5-7 minutes, add 1/2 cup of chopped spinach leaves into the pan. And along with these add chopped basil leaves. Cook them for about 2-3 minutes and switch off the flame.

4.Let the filling cool for some time and then take it out in a bowl. Add ricotta cheese, salt and pepper to it. Mix well and our filling is ready to fill in pasta.

Making Mushroom Ravioli-
1.Take the pasta sheet and cut it into circles with the help of a cutter. Now add filling in the center of the sheet.

2.Apply water on sides of the sheet and place another circle sheet on top of it and seal it properly. Make other ravioli like this.

Boiling Mushroom Ravioli-
1.Boil water in a vessel, add 1 tablespoon oil and salt. Then add ravioli one by one and cook them for about 3 minutes and take them out in a plate.

Making sauce for Mushroom ravioli-
1.Heat oil in a pan, add onions and saute them till translucent and then add mushrooms. Cook them till they soften.

2.Now add garlic and stir. Then add vegetable stock and let it reduce by half of its quantity.

3.Add chimes and cream. Mix well and switch off the flame. Now add basil leaves and mix again.

4.Serve the Mushroom Ravioli with the sauce and enjoy.

Tips and Variations:
- While making filling of the ravioli, make sure the filling ins’t overly wet. It should be soft and pate like.
- You can use any kind of mushrooms for making this recipe.
- Make sure you don’t cover ravioli with loads of sauce. We just need to coat it or it will be too heavy and rich.
- Don’t add water while kneading the dough. It will become sticky if you add water.
- Make sure your dough for pasta is perfect other wise making ravioli would be a mess.
- Pasta sheet should be as thin as possible.
- If you are not sure about the pasta sheets, you can use ready made lasagna sheets available in the market.
