Khaman Dhokla: A dish served as Breakfast, Side dish or Main Course

Dhokla is a vegetarian culinary dish that is found mainly in the Indian state of Gujarat and parts of adjacent states. It is traditionally made with a fermented batter derived from rice and split chickpeas. Dhokla can be eaten for breakfast, as a main course, as a side dish or as a snack. Dhokla is very similar to Khaman, however Dhokla is made of batter derived from rice gram and is white in color, whereas Khaman is typically made from Chickpeas gram and looks yellow in color. Khaman has become widely popular outside Gujarat but is misunderstood or incorrectly known as Dhokla.

Information about the recipe-

There are many ways and variants of the simple Khaman Dhokla, but this recipe is dedicated to instant version. Basically Dhokla is prepared with grounding the soaked channa dal which is later fermented overnight. Fermentation process can be time consuming and requires a lot of planning and preparation in advance. To counter these difficulties, we have some methods of artificial fermentation which will your Dhokla instantaneously.

In this recipe, I have used eno which helps the batter to rise and achieve the same texture and sponginess. Most of the people like instant variation as you can prepare it whenever you have the cravings for that. Most of the time we don’t try a recipe because its time consuming and requires a lot of planning.

Ingredients:-

To make Khaman Dhokla batter
  • Gram flour- 1 1/2 cup
  • Sugar- 1/2 teaspoon
  • Salt- 1/2 teaspoon
  • Turmeric powder- 1/2 teaspoon
  • Eno fruit salt- 1 teaspoon or 5 grams
  • Oil- 1 tablespoon
To make Khaman Dhokla syrup
  • Oil- 1 tablespoon
  • Mustard seeds- 1/2 teaspoon
  • Green chilies- 5 pieces
  • Curry leaves- 8-9
  • Water- 1/2 cup
  • Sugar- 2 teaspoon
  • Salt- 1/2 teaspoon
  • Coriander leaves (chopped)- 2 tablespoon
  • Lemon juice- half lemon
For garnishing of Khaman Dhokla
  • Grated Coconut
  • Coriander leaves chopped

Directions to make Khaman Dhokla-

1.In a bowl, add the gram flour. Then add 1/2 teaspoon sugar, 1/2 teaspoon salt and 1/2 turmeric powder. Mix everything well.

2.Add water and mix well with a whisker. The batter should be of flowing consistency and not very thick. And it should be lumps free. Then heat one tablespoon oil and add it into the batter and mix well.

3.Rest the batter for about 10 minutes. Meanwhile grease a cake tin with some oil. Heat a pressure cooker/pot with some water and place a stand inside and let the water come to a boil.

4.Just before pouring the batter into the cake tin, add eno fruit salt and mix gently. Eno will help to add air into the batter, which will result in instant fermentation.

5.Pour the batter immediately into the cake tin. Place the tin in the pot/cooker. Close and steam for about 25-30 minutes on medium flame.

6.When the Dhokla is being cooked, prepare the syrup. Heat a pan with some oil, add mustard mustard seeds to it and let it splutter.

7.Then add green chilies(slit them in between), curry leaves. Saute them.

8.After few minutes pour water. Then add salt and sugar. Mix well and bring it to a boil. Then turn off the flame. Add lemon juice and coriander seeds, stir well.

9.Check the Dhokla with a tooth pick and let it come to room temperature. Take out the Dhokla from the cake tin and cut it into squares.

10.Pour the tempered ingredients onto the Dhokla. Let the Dhokla soak in the tempering. Finally garnish it with grated coconut and coriander leaves

11.The Khaman Dhokla is ready to serve. You can serve it with mint chutney or as it is.

Tips and variations-

  • Make sure that pressure cooker/pot is properly heated for about 2-3 minutes before placing the cake tin or else Dhokla will take more time to cook.
  • Whisk the Dhokla batter well before adding eno for soft and spongy Dhokla. Make sure batter is lumps free.
  • After adding eno fruit salt don’t keep batter for long time otherwise Dhokla will not be spongy.
  • Sometimes Dhokla gets red patches, to avoid it we add hot oil in the batter itself or you can avoid mixing turmeric. Red patches are because turmeric reacts with eno.
