Gajar ka halwa, also known as gajorer halua, Gajrela, Gajar Pak, and carrot halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly. It is often served with the garnish of almonds and pistachios. The nuts and other items used are first sauteed in ghee.

Ingredients:-

  • Grated carrots – 4 cups
  • Full fat milk – 1/2 cup
  • Sugar – 3/4 cup
  • Ghee – 1 tablespoon
  • Cardamom powder – 1/2 teaspoon
  • Cashews – 10 to 12 (chopped)
  • Almonds – 10 to 12 (chopped)
  • Pistachios – 10 to 12 (chopped)
  • Golden raisins – 2 tablespoon
  • Grated khoya – 1/2 cup

Instructions to make Gajar ka halwa-

Preparations:

1.Rinse, peel and grate the carrots (8-9 medium sized tender juicy carrots), either with a hand grater or in a food processor.

2.For this recipe we need 4 cups of grated carrots.

Making Gajar ka halwa:

1.In a kadai or deep thick bottom pan or a non-stick pan add 4 cups of grated carrots. On low flame, cook them for about 5 minutes. Keep stirring in between.

2.Then add sugar to it. When we add sugar to it, carrots will release some water and our mixture will become moist and runny. Now we will cook the carrots on low fame till all water gets evaporated.

3.Now add 1 table spoon of ghee in the mixture. Give a nice mix and then add about 1/2 teaspoon of cardamom power. Mix well and then add about 1/2 cup of milk. Milk will remove the stickiness of the mixture and will give a nice flavor to our halwa.

4.Reduce the milk completely. It will give a dark color to our Gajar ka halwa.

5.Now turn off the gas and add the chopped nuts. Give a nice mix and add grated khoya to it. Mix well again. Garnish it with raisins and nuts.

6.Gajar ka halwa is ready to serve. Serve hot.

Notes:
  • Use fresh, juicy and tender carrots.
  • Do not use the white part of the carrot. Remove it while grating the carrot. because white part of the carrot does not give a nice flavor.
  • The halwa stays good in fridge for about a week. You can store it and heat it and eat whenever you want.
  • Stir the carrots continuously while cooking don’t let them stick on bottom of the pan.
  • You can use nuts of your choice.

Tips:
  • To make gajar halwa, it is important to buy tender and juicy carrots so that they are easy to grate.
  • You can grate carrots manually or in a food processor. Obviously, The food processor makes the grating carrots easier.
  • Use a heavy kadai to make the halwa. The carrot halwa is simmered and stirred often. So that it should not get burnt, a really good kadai makes the job easier. You can also use a non-stick kadai or thick bottomed pan.
