Doughnut or Donut: dessert eaten as Snack
Doughnut or donut is a type of fried dough confection or dessert food. The doughnut is popular in many countries and is prepared in various forms as a sweet snack that can be homemade or purchased in bakeries, supermarket, food stalls, and franchised specially vendors.
Doughnuts are usually deep fried from a flour dough, and typically either ring-shaped or a number of shapes without a hole, and often filled, but can also be ball-shaped (“doughnut holes“). Other types of batters can also be used, and various toppings and flavorings are used for different types, such as sugar, chocolate, or maple glazing. Doughnuts may also include water, leavening, eggs, milk, sugar, oil, shortening, and natural or artificial flavors.

Types of Doughnuts-
The most two common types are the ring doughnut and the filled doughnut, which is injected with the fruit preserves, cream, custard, or other sweet fillings. Alternatively, small pieces of dough are sometimes cooked as doughnut holes. Once fried, doughnut may be glazed with a sugar icing, spread with icing and sugar on the top, or topped with powdered sugar, cinnamon, sprinkles or fruit.
Other shapes include rings, balls, flattened spheres, twists, and other forms. Doughnut varieties are also divides into cake and yeast-risen type doughnuts. Doughnuts are often accompanied by coffee but can also be paired with milk.

Shapes of doughnuts-
Rings
Ring doughnuts are formed by one of two methods: by joining the ends of a long, skinny piece of dough into a ring, or by using a doughnut cutter, which simultaneously cuts the outside and inside shape, leaving a doughnut-shaped piece of dough can be cooked and served as a “doughnut hole” or added back to the batch to make more doughnuts.
There are two types of doughnuts, those made from yeast-based dough for raised doughnuts, or those made from a special type of cake batter. Yeast-raised doughnuts contain about 25% oil by weight, whereas cake doughnuts ‘ oil content is around 20%, but they have extra fat included in the batter before frying.

Topping
After frying, ring doughnuts are often topped. Raised doughnuts are generally covered with a glaze (icing). Cake doughnuts can also be glazed, or powdered with the confectioner’s sugar, or covered with cinnamon and granulated sugar. They are also topped with cake frosting and sometimes sprinkled with coconut, chopped peanuts or sprinkles.

Holes
Doughnut holes are small, bite-sized doughnuts that were traditionally made from the dough taken from the center of ring doughnuts. Traditionally, donut holes are made by frying the dough removed from the center portion of the donut. Consequently, they are considerably smaller than a standard donut and tend to be spherical. Similar to standard donuts, donut holes may be topped with confections, such as glaze or powdered sugar.

Other shapes
There are many other specialized doughnut shapes such as old-fashioned, bars or a rectangular shapes, or with the dough twisted around itself before cooking.

TIPS:
- While adding custard paste in the the milk make sure you add it spoon by spoon and not all at once.
- Use instant yeast for making this recipe and not dry yeast.
- While adding yeast in the milk, your milk should be hot. Cold milk will not rise the yeast.
- If your yeast does not rise in the milk, don’t proceed further and make a new batch of milk and yeast. Do not proceed with the same milk or the donuts won’t rise while frying.
- If you don’t have a donut cutter, you can use a glass and bottle cap for it. Use glass for cutting the large circle and bottle cap for making a hole.
- While frying the donuts, do not add too many donuts at once instead fry 3-4 at once.
